How to Cook Garlic and Grated Parmesan Mashed Potatoes

I like eating potatoes. Be it baked or fried. This one I am sharing with you about cooking mashed potatoes with garlic and grated parmesan cheese. I read this in a cook book and tried it at home myself.

To prepare you need the following ingredients:

1 Kilogram potatoes
1 tsp rock salt
2 tbsp. garlic, crushed
1 1/2 cups milk
1/2 tsp. fresh ground pepper
1/2 cup sour cream
1/3 cup grated Parmesan cheese
Chopped fresh chives
1/2 cup butter

1. Peel Potatoes. Wash well and cut into large pieces. Put in a pot with enough water to cover. Add salt and bring to a boil. Cover and lower heat to simmer. Cook until fork tender, about twenty to thirty minutes. Drain immediately in a colander. Do not soak cooked potatoes in water. Return the potatoes to the pot, and cook over high heat to dry them out. Shake the pot to avoid scorching the potatoes and to allow excess water to evaporate.
2. In another saucepan, melt the butter over medium heat and saute the garlic until golden. Pour in the milk, salt, and pepper. Bring to a quick boil. remove from the heat.
3. Heat oven to 400 degrees Fahrenheit.
4. Transfer potatoes to a mixing bowl, or use the same pot that cooked them. Mash the potatoes with a potato masher or electric mixer until no lumps are left.
5. Mash or beat the potatoes while slowly pouring in the hot milk and the butter mixture. Add the milk in small amounts, beating after each addition.
6. Beat until light and fluffy.
7. Mix in sour cream and 1/3 cup cheese.
8. Spread mashed potato mix in a dish. Sprinkle with 2 tbsp. cheese. Bake 20 minutes or until hot.
9. Before serving sprinkle with chives.

Make six servings.
